Instructions
Step 1: Cook the Apple Filling
-
In a skillet, melt 1 tbsp butter over medium heat.
-
Add diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and a pinch of salt.
-
Stir and cook for 6–8 minutes, until the apples are soft and caramelized.
-
Remove from heat and set aside to cool slightly.
Step 2: Make the Cheesecake Filling
-
In a mixing bowl, beat together the cream cheese, Greek yogurt, powdered sugar, and vanilla until smooth and creamy.
-
If you like it a little sweeter, add a touch more powdered sugar to taste.
-
Set aside or refrigerate until ready to assemble.
Step 3: Assemble the Quesadillas
-
Lay out the tortillas on a clean surface.
-
Spread a layer of the cheesecake filling over one half of each tortilla.
-
Spoon the apple mixture over the cheesecake layer.
-
Fold each tortilla in half to enclose the filling.
Step 4: Cook the Quesadillas
-
Heat a skillet or griddle over medium heat and add a little butter or oil.
-
Place quesadillas in the skillet, cooking 2–3 minutes per side until golden brown and crisp.
-
Remove and let rest for 1–2 minutes before cutting into wedges.
Step 5: Serve & Enjoy
-
Sprinkle quesadillas with cinnamon sugar or powdered sugar if desired.
-
Drizzle with maple syrup or honey and add whipped cream or chopped nuts for a decadent finish.
-
Serve warm and enjoy the gooey, sweet goodness in every bite.
Notes
Use Crisp Apples – Granny Smith or Honeycrisp give the best texture and flavor.
Soften Cream Cheese – Let it sit at room temperature for easier mixing.
Don’t Overfill – A thin layer of filling prevents leaks and ensures even cooking.
Cook on Medium – Too hot and the tortillas will burn before the filling is heated.
Add a Crunch – Toasted nuts add great texture contrast to the creamy and soft filling.
