Ingredients
For the Fritters:
¾ cup all-purpose flour
1 tbsp cornmeal
1 tbsp sugar
2 tsp baking powder
½ tsp salt
½ tsp black pepper
½ cup milk
1 large egg
2 ½ cups finely chopped sweet onions (like Vidalia or yellow onions)
Vegetable oil for frying (such as canola or sunflower oil)
Optional Dipping Sauce:
½ cup sour cream
2 tbsp mayonnaise
1 tbsp chopped fresh chives or green onions
½ tsp garlic powder
Salt and pepper to taste
Instructions
Step 1: Mix the Dry Ingredients
-
In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and black pepper.
-
These dry ingredients form the base of a light, crispy batter.
Step 2: Add the Wet Ingredients
-
In a separate small bowl, beat the egg and milk together until smooth.
-
Pour the wet mixture into the bowl with the dry ingredients.
-
Stir just until combined – do not overmix.
Step 3: Fold in the Onions
-
Add the finely chopped sweet onions into the batter.
-
Gently fold until the onions are fully coated and evenly distributed.
-
The mixture should be thick but spoonable.
Step 4: Heat the Oil
-
Pour about ½ inch of vegetable oil into a large skillet and heat over medium heat.
-
To test if the oil is ready, drop in a small bit of batter – if it sizzles immediately, the oil is hot enough.
Step 5: Fry the Fritters
-
Carefully drop heaping spoonfuls of batter into the hot oil, spacing them slightly apart.
-
Flatten slightly with the back of the spoon for even cooking.
-
Fry for 2–3 minutes on each side, or until golden brown and crispy.
-
Use a slotted spoon to transfer fritters to a paper towel-lined plate or wire rack.
Step 6: Make the Dipping Sauce (Optional)
-
In a small bowl, mix together sour cream, mayonnaise, chopped chives, garlic powder, salt, and pepper.
-
Stir until smooth and refrigerate until ready to serve.
Step 7: Serve & Enjoy
-
Serve the onion fritters warm, either on their own or with your favorite dipping sauce.
-
Sprinkle with a pinch of sea salt or fresh herbs if desired.
Notes
Use Sweet Onions – Vidalia or yellow onions give the fritters their signature flavor
Chop Onions Evenly – Uniform pieces cook more evenly and prevent soggy spots
Don’t Overcrowd the Pan – Fry in batches to maintain crispiness
Drain Well – Let excess oil drip off to keep the fritters light and crisp
Serve Immediately – Best enjoyed hot and fresh from the skillet
