Ingredients

For the Fritters:
¾ cup all-purpose flour
1 tbsp cornmeal
1 tbsp sugar
2 tsp baking powder
½ tsp salt
½ tsp black pepper
½ cup milk
1 large egg
2 ½ cups finely chopped sweet onions (like Vidalia or yellow onions)
Vegetable oil for frying (such as canola or sunflower oil)

Optional Dipping Sauce:
½ cup sour cream
2 tbsp mayonnaise
1 tbsp chopped fresh chives or green onions
½ tsp garlic powder
Salt and pepper to taste


Instructions

Step 1: Mix the Dry Ingredients

  1. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and black pepper.

  2. These dry ingredients form the base of a light, crispy batter.

Step 2: Add the Wet Ingredients

  1. In a separate small bowl, beat the egg and milk together until smooth.

  2. Pour the wet mixture into the bowl with the dry ingredients.

  3. Stir just until combined – do not overmix.

Step 3: Fold in the Onions

  1. Add the finely chopped sweet onions into the batter.

  2. Gently fold until the onions are fully coated and evenly distributed.

  3. The mixture should be thick but spoonable.

Step 4: Heat the Oil

  1. Pour about ½ inch of vegetable oil into a large skillet and heat over medium heat.

  2. To test if the oil is ready, drop in a small bit of batter – if it sizzles immediately, the oil is hot enough.

Step 5: Fry the Fritters

  1. Carefully drop heaping spoonfuls of batter into the hot oil, spacing them slightly apart.

  2. Flatten slightly with the back of the spoon for even cooking.

  3. Fry for 2–3 minutes on each side, or until golden brown and crispy.

  4. Use a slotted spoon to transfer fritters to a paper towel-lined plate or wire rack.

Step 6: Make the Dipping Sauce (Optional)

  1. In a small bowl, mix together sour cream, mayonnaise, chopped chives, garlic powder, salt, and pepper.

  2. Stir until smooth and refrigerate until ready to serve.
