Instructions
Step 1: Slice the Potatoes
Wash the potatoes thoroughly. You can peel them or leave the skin on for a rustic touch.
Using a mandoline or very sharp knife, slice the potatoes as thinly as possible—about 1/16-inch thick for maximum crispness.
Step 2: Soak the Slices
Place the sliced potatoes in a large bowl of cold water.
Soak for at least 20–30 minutes to remove excess starch (this helps with crispiness).
Drain and pat completely dry using a salad spinner or clean kitchen towel.
Step 3: Season the Potatoes
In a dry bowl, toss the dried potato slices with olive oil and sea salt.
If using extra seasonings, add them now or after air frying (depending on preference).
Step 4: Air Fry in Batches
Preheat your air fryer to 350°F (175°C).
Arrange a single layer of potato slices in the air fryer basket—don’t overcrowd.
Air fry for 7–10 minutes, flipping or shaking the basket halfway through.
Keep a close eye after 6 minutes, as chips can go from golden to burnt quickly depending on thickness and air fryer model.
Step 5: Cool and Crisp
Remove chips from the basket and let them cool on a wire rack. They will crisp up even more as they cool.
Repeat with remaining batches until all slices are cooked.
