Ingredients
For the Tomatoes:

3 medium green tomatoes (firm and unripe)

½ tsp salt

¼ tsp black pepper
For the Breading Station:

½ cup all-purpose flour

2 large eggs
-
2 tbsp milk
-
1 cup breadcrumbs (panko preferred for extra crunch)

½ cup cornmeal (adds a Southern-style texture)

½ tsp garlic powder

½ tsp paprika

¼ tsp cayenne pepper (optional, for a bit of heat)
For Cooking:

Olive oil spray or cooking spray
Optional Dipping Sauce:

¼ cup mayonnaise

1 tbsp plain Greek yogurt or sour cream

1 tsp Dijon mustard

1 tsp lemon juice

Instructions
Step 1: Prep the Tomatoes
Wash and slice the green tomatoes into ¼-inch thick rounds.
Lay slices on paper towels and lightly sprinkle with salt.
Let them sit for 10 minutes to draw out excess moisture, then pat dry.
Step 2: Set Up the Breading Station
In one bowl, place the flour.
In a second bowl, whisk together eggs and milk.
In a third bowl, mix breadcrumbs, cornmeal, garlic powder, paprika, cayenne, salt, and pepper.
Step 3: Bread the Tomatoes
Working one slice at a time:

Dredge in flour (shake off excess).

Dip into egg mixture.

Press into breadcrumb-cornmeal mix until well coated.
Place breaded slices on a plate or tray.
Step 4: Preheat the Air Fryer
Preheat your air fryer to 400°F (200°C) for 3–5 minutes.
This helps the coating crisp up immediately.
Step 5: Air Fry the Tomatoes
Lightly spray both sides of the breaded tomatoes with olive oil spray.
Place in a single layer in the air fryer basket—don’t overcrowd.
Air fry at 400°F for 8–10 minutes, flipping halfway and spraying again if needed.
They’re done when golden brown and crisp on both sides.
Step 6: Make the Dipping Sauce (Optional)
In a small bowl, mix together mayo, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
Stir until smooth and chill until ready to serve.
