Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9-inch cake pan with parchment paper or grease it well.

Step 2: Mix the Dry Ingredients

  1. In a large bowl, whisk together almond flour, sweetener, baking powder, baking soda, and salt.

Step 3: Mix the Wet Ingredients

  1. In another bowl, whisk eggs, almond milk, melted butter (or coconut oil), vanilla extract, and apple cider vinegar until well combined.

Step 4: Combine and Bake

  1. Gradually add the wet ingredients into the dry ingredients, mixing until a smooth batter forms.
  2. Pour the batter into the prepared cake pan and spread it evenly.
  3. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Notes

  • Use room temperature eggs – This helps the batter mix more evenly.
  • Do not overmix – Mix just until combined for a light, fluffy cake.
  • Adjust sweetness – Taste the batter before baking and adjust the sweetener if needed.
  • For a layer cake, double the recipe and use two cake pans.
