  • 1 cup shredded cheddar cheese – Adds a rich, creamy texture.
  • ½ cup grated Parmesan cheese – Brings a sharp, nutty taste.
  • 1 cup all-purpose flour – Helps bind everything together.

  • ½ teaspoon salt – Balances the flavors.
  • ¼ teaspoon black pepper – For a little kick.
  • ¼ teaspoon paprika (optional) – Adds warmth and color.
  • 3 tablespoons fresh basil, finely chopped – The key to that fresh, herby taste.
  • 4 tablespoons unsalted butter, softened – Helps with texture and richness.
  • 34 tablespoons cold water – To bring the dough together.

Instructions

Step 1: Prepare the Dough

  1. In a mixing bowl (or food processor), combine the cheddar, Parmesan, flour, garlic powder, salt, pepper, and paprika.
  2. Add the softened butter and mix until the mixture is crumbly.
  3. Stir in the chopped basil.
  4. Gradually add cold water, one tablespoon at a time, until the dough holds together but is not sticky.

Step 2: Shape the Bites

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll the dough into small 1-inch balls and place them on the prepared baking sheet, about an inch apart.
  3. Lightly press each ball down to flatten slightly.

Step 3: Bake Until Golden

  1. Bake for 12-15 minutes or until golden brown and slightly crispy on the edges.
  2. Let them cool for a few minutes before serving.

Notes

  • Use freshly grated cheese – It melts better and gives a richer flavor.
  • Don’t overwork the dough – Mix just until combined to keep them light and tender.
  • Make ahead – You can freeze the unbaked dough balls and bake them fresh when needed.
