  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup fruit jelly or jam of your choice (strawberry, grape, or raspberry work great!)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2: Make the Cookie Dough

  1. In a large bowl, cream together the butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

Step 3: Shape the Cookies

  1. Scoop about 1 tablespoon of dough and roll it into a ball. Place it on the baking sheet.
  2. Using your thumb or the back of a teaspoon, gently press a small well into the center of each dough ball.

Step 4: Add the Jelly

  1. Spoon about ½ teaspoon of jelly into the center of each cookie.

Step 5: Bake the Cookies

  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • Use smooth peanut butter for a classic texture or crunchy peanut butter for added crunch.
