For the Meatloaf:

  • 1 ½ lbs ground beef – The base of your meatloaf, use lean for less grease.
  • ½ cup breadcrumbs – Helps bind everything together.
  • 1 egg – Adds moisture and structure.
  • ½ cup milk – Keeps the meatloaf juicy.
  • 1 teaspoon Worcestershire sauce – Deepens the umami flavor.
  • 1 teaspoon salt – Enhances all the flavors.
  • ½ teaspoon black pepper – A little kick of spice.

For the Filling:

  • 1 tablespoon olive oil – For sautéing the veggies.
  • ½ cup green bell pepper, diced – A signature Philly cheesesteak ingredient.
  • ½ cup onion, diced – Adds a touch of sweetness.
  • 1 cup mushrooms, chopped (optional) – Adds a savory depth.
  • 6 slices provolone cheese – Melty, gooey goodness.

For the Topping:

  • ¼ cup ketchup – A classic meatloaf glaze.
  • ½ teaspoon garlic powder – Adds extra flavor.
  • ½ teaspoon onion powder – Complements the filling.

Instructions

Step 1: Prepare the Filling

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Sauté the bell peppers, onions, and mushrooms until soft (about 5 minutes). Remove from heat and let cool.

Step 2: Make the Meatloaf Mixture

  1. In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, Worcestershire sauce, salt, and pepper. Mix until just combined—don’t overmix!

Step 3: Assemble the Meatloaf

  1. Place half of the meatloaf mixture into a greased loaf pan and flatten it out.
  2. Layer the sautéed veggies over the meat, then top with provolone cheese slices.
  3. Add the remaining meat mixture on top and press to seal the edges.

Step 4: Add the Topping & Bake

  1. In a small bowl, mix ketchup, garlic powder, and onion powder. Spread this over the top of the meatloaf.
  2. Cover with foil and bake for 45 minutes.
  3. Remove the foil and bake for another 15 minutes until the top is slightly caramelized and the internal temperature reaches 160°F (71°C).

Step 5: Rest & Serve

  1. Let the meatloaf rest for 10 minutes before slicing—this helps retain its juiciness!
  2. Serve with mashed potatoes, roasted veggies, or a fresh salad.

Notes

✔ Use freshly grated cheese – It melts better than pre-sliced.
✔ Don’t overmix the meat – This keeps it tender instead of tough.
✔ Let it rest before slicing – This prevents it from falling apart.
