For the Pancakes:

  • 1 ½ cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk (or any milk alternative)
  • 1 egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

For the Cinnamon Swirl:

  • ¼ cup butter, melted
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon

For the Cream Cheese Glaze:

  • 2 tablespoons cream cheese, softened
  • ¼ cup powdered sugar
  • 1 tablespoon milk
  • ½ teaspoon vanilla extract

Instructions

Step 1: Prepare the Cinnamon Swirl

  1. In a small bowl, mix the melted butter, brown sugar, and cinnamon until well combined.
  2. Pour the mixture into a piping bag or a zip-top bag and set aside.

Step 2: Make the Pancake Batter

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. (A few lumps are okay—don’t overmix!)

Step 3: Cook the Pancakes

  1. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  2. Pour about ¼ cup of pancake batter onto the skillet for each pancake.
  3. Snip the tip of the piping bag (or zip-top bag) and swirl the cinnamon mixture onto the pancake batter.
  4. Cook until bubbles form on the surface (about 2 minutes), then carefully flip and cook for another 1-2 minutes until golden brown.

Step 4: Make the Cream Cheese Glaze

  1. In a small bowl, whisk together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth.

Step 5: Serve and Enjoy

  1. Stack the pancakes on a plate and drizzle with the cream cheese glaze.
  2. Serve warm and enjoy every cinnamon-filled bite!

Notes

  • Don’t Overmix the Batter: A few lumps will keep your pancakes fluffy.
  • Keep the Cinnamon Swirl Thick: If it’s too runny, it may spread too much when cooking.
  • Use Low Heat for Cooking: The sugar in the cinnamon swirl can burn quickly, so cook on medium-low heat.
  • Make Ahead: Prepare the cinnamon swirl and cream cheese glaze the night before for a quick breakfast!
